做法:春笋切(qiē )成片(piàn )后加少许盐(yán )捞(lāo )出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油(yóu ),放入生姜、春笋(sǔn )、牛肉片(piàn )、葱段(duàn )翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火。煮到(dào )水(shuǐ )快熬干(gàn )的时(shí )候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖焖。
