做法:洗净宰好鲫鱼(yú ),洗净淮山和薏米。用(yòng )清(qīng )水(shuǐ )把陈皮泡软(ruǎn ),拍裂一(yī )小块姜,热锅,用姜块在锅(guō )上(shàng )擦一遍,放(fàng )两勺油,待油六成(chéng )热下鱼,煎至(zhì )微黄(huáng )。煮沸瓦煲里的清水,放(fàng )入煎煮好的鲫(jì )鱼和其他材料,武火煮沸,转(zhuǎn )中(zhōng )小火煲一个半小时,下盐(yán )调味即可品尝。
