做法:春笋切成(chéng )片后(hòu )加少许(xǔ )盐捞出后用清(qīng )水(shuǐ )浸泡,生姜切(qiē )片(piàn ),葱切成段。锅(guō )烧热(rè ),倒入(rù )2勺油,放(fàng )入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝(háo )油翻炒(chǎo )均匀,加入少量清水半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的时候加入盐,翻(fān )炒均(jun1 )匀稍收汁时盖上锅盖焖。
