做法:春笋切(qiē )成片后加少许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春(chūn )笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加(jiā )入(rù )生抽、老(lǎo )抽、蚝油翻炒均(jun1 )匀,加入(rù )少(shǎo )量清水(shuǐ )半掩住春笋(sǔn ),盖上锅(guō )盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖(gài )上(shàng )锅盖焖。
