做法:春笋切(qiē )成片后加少许(xǔ )盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油(yóu ),放入生姜(jiāng )、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再(zài )加入(rù )生(shēng )抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入少量(liàng )清水半掩住(zhù )春笋,盖(gài )上锅盖大火煮开后转(zhuǎn )中(zhōng )火。煮到(dào )水快熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅(guō )盖焖。
